USES OF OAK BARS:
– Used to soak white wine. After soaking for enough time, the finished wine has a yellow or amber color, aroma and taste similar to Macallan wine.
Using oak barrels to age wine will bring more wonderful things to the wine.
During combustion:
- Tannin is converted into aroma. After soaking, the aroma blends with alcohol, creating the characteristic smell of wine soaked in TGS.
- Hemicellulose found in oak wood is caramelized during the burning process. During the process of maceration, this sugar continues to be transformed and mixed with the original wine we macerate, creating a complex wine that can only be found in oak barrels.
- Aldehydes will evaporate through the wood fibers, so drinking wine will be smoother and safer.

OAK WOOD INFORMATION
American oak or white oak is one of the hardwood trees in Eastern and Central North America, usually reaching a height of 24 – 30m. White oak is called according to the color after the finished wood. In nature, they have a light gray body.
The oak trees selected to make domestically produced oak barrels are 50 years old or more.
The wood is then left to dry for 6 months to 1 year , then put into the barrel making and packaging process.
USING
After purchasing an oak barrel, you should soak it in water for about 2-3 days to allow the wood fibers to expand. This step is very important because this will help seal the gaps between the wooden valves. Repeat the soaking process until the leak stops.
Rinse the barrel with boiling water (at least 85°C) to help eliminate bacteria: pour boiling water and shake the barrel (If the barrel is large, tilt the barrel to let the water reach the inside sides of the barrel), then let it settle for 15 – 20 minutes.
Finally, turn the barrel upside down, let the water dry and ventilate.
After completing the above preparation step, you can pour in wine to soak.
PRESERVE
Container storage:
Store oak barrels in cool conditions away from direct sunlight and rain, this will help protect the exterior of the barrel and the wine soaked inside.
During the soaking process, the wine will gradually seep into the barrel or evaporate. Add more wine regularly to avoid the barrel drying out.
Do not let the barrel dry for more than 10 days.
Storing wine in barrels:
Temperature fluctuations will affect the ability to convert tannins from wood into wine, thereby directly affecting the time spent in barrels and the intensity of flavor. Although everyone’s taste is different, having an exact standard will help you adjust the flavor of your wine to your liking. D.Cheery recommends that you place oak barrels in a location that has:
- Temperature: 14 – 20℃ for spirits, 10 – 14℃ for wine
- Humidity: 70 – 80%
- If the humidity is below standard conditions, more water vapor will evaporate, leading to a high alcohol concentration in the wine. Also known as heavier wine
- If the humidity is above standard conditions, the wine will evaporate more, leading to a high alcohol concentration in the wine. Also known as lighter wine.
During the soaking process, check and add more wine because it will decrease by 15 – 25%/year due to evaporation during the soaking process. In the first month it is every 2 weeks, the following times are every 2 – 3 months or depending on your actual storage, because evaporation depends on temperature and humidity.

- Method: When the barrel leaks, D.Cheery moves the new barrel to collect the old barrel, the new barrel still has a 12-month warranty from the date of delivery.
